This is the USDA Prime beef brisket that is aged and smoked by the legendary Wagshal’s Delicatessen in Washington, D.C. Known as the “president’s deli,” this family-owned institution has served politicos including Truman and Ford since 1925, and it continues to butcher and cure its own meats in house. Wagshal’s is the only American purveyor to use USDA Prime cuts for its smoked brisket, and the critically acclaimed beef is prepared in a three-step process that takes more than two months. After aging for 28 days, the meat is wet-cured for four weeks in a mixture of red wine and freshly roasted whole spices, before hickory-smoking for a minimum of 12 hours. The resulting brisket is tender and rich, with just enough marbling to balance the peppery flavor and melt in the mouth. Shipped frozen in insulated packaging.
