This is the crumbly, creamy blue Stilton cheese created by the legendary Long Clawson cheesemakers of Nottinghamshire, England. In keeping with the centuries-old practice for producing artisanal blue cheese using only local milk, the makers gently ladle the curds by hand to achieve the signature slightly sweet, nutty flavor, pungent aroma, and iconic veins of blue that radiate from the center. After a long maturation, cheesemakers trim the rind, carefully press it into a ceramic crock and seal it with wax to preserve its freshness. Officially trademarked Stilton can be produced only in the counties of Nottinghamshire, Derbyshire, and Leicestershire, and among the five cheesemakers who still produce it, Long Clawson is one of only two that does so by hand.
