Sous vide involves placing meat, fish, or vegetables in a plastic pouch or glass jar and placing it in a pot of water to cook the food evenly at a consistent and uniform temperature. Unlike grilling or roasting that can dry out or overcook your food, sous vide cooking retains moisture and ensures a thoroughly cooked meal without burnt ends or charred exteriors. Using the stick’s digital control panel, simply set the water’s temperature up to 194° F (in 0.5° F increments) and attach it to the side of any pot up to 5 1/4 gallons.
