The Stovetop Churrasco

Inspired by the 200-year-old Brazilian barbecuing technique favored by gaúchos, this is the stovetop churrasco grill. The cooker sets up over a gas stove burner and the included six stainless-steel skewers and grill basket hold up to 4 1/2 lbs. of meat, fish, or vegetables upright and around the flame to produce the slightly charred, rich flavor of churrasco. The skewers can be rotated to cook all sides of a steak or sausage and they remove from the cooker for tableside service that evokes a Brazilian steakhouse. The cooker's aluminum walls ensure even distribution of heat and a water basin catches drippings before they contact the burner to mitigate smoke.
