This is the 10-piece knife set used by students at leading culinary academies. Made by Mercer, cutlery suppliers to over 90% of North American gastronomy institutes, the knife blades are forged from a single piece of high-carbon molten German steel that will not rust, corrode, or discolor through generations of use. Taper-ground edges slice or chop easily through food and maintain their sharpness much longer than typical beveled edges. The ergonomic handles are made from a patented thermoplastic elastomer that is non-slip to provide a confident grip whether hands are wet or dry, they are impervious to damage from kitchen oils, and withstand extreme temperature fluctuations. The set includes every knife essential to a culinary education (8" chef's knife, 7" Santoku with cullens, 6" boning, 5" utility, 3 1/2" pairing, 10" carving, 8" serrated bread), a 6" carving fork, 10" sharpening steel, and a metal reference ruler with templates for classic knife cuts, recipes, and measurement conversions.
