Handmade in Viscomtat, France by Jean Dubost, world-renowned cutlers since 1920, these are the steak knives favored by prime steakhouses. Made in the 200 year-old tradition of the Laguiole knife, each has an iconic “bee” welded onto its sturdy, full-tang stainless steel blade, a detail stemming from a French legend that chronicles Napoleon Bonaparte awarding his imperial seal—the bee—to the village of Laguiole for the valor of its soldiers. The blade is stamped, ground, and polished by a team of cutlery artisans. The solid handle is made from olive wood, a tight-grained durable hardwood that, combined with the hand-sharpened, 1.5mm-thick double-bevel edge blade, provides the necessary heft for quickly cutting through N.Y. strip steaks or double-cut pork chops. Each has a 4.29"-long blade, measures 9" long overall; they come in a wooden storage box. 10 1/4" L x 5 1/2" W x 1" H. (2 3/4 oz.)
