This is the freshly fallen oak log with intact bark inoculated with organic shiitake spores that produces mushrooms in in as little as six weeks from the "silver tag" inoculation date and continues to produce for up to three years. With a meaty texture and rich umami flavor, shiitakes are a highly prized edible fungi that add depth and subtlety to sauces, soups, stir fries, and stews. The log is soaked for 24 hoursand then stored in a cool, dark location (85% shade) until the mushrooms begin to sprout. After a harvest is complete, re-soaking (8-10 weeks) and storing encourages the next crop for a personal farm-to-table experience. Each log is carefully gathered, hand-cut, and planted by two fungi farmers in rural Georgia. 12" L x 3 1/2" D.
