This is the electric knife sharpener that hones blades to a 15º angle--the edge favored by Japanese sushi chefs for its unparalleled sharpness. The spring guides keep the blade at the optimal 15º angle while 100% diamond abrasives create a triple bevel, arch-shaped edge that maintains its sharpness longer that typical hollow ground or v-shaped edges. The three-stage device sharpens, hones, and strops the blade from tip to bolster in one minute while removing minimal metal to prolong the life of the knife. Also accommodates double-edge Santoku, single-edge sashimi, and serrated knives. 9 1/2" L x 4 1/4" H x 4" D. (4 3/4 lbs.)
